IVOR Early Cider

IVOR Early 2020

A still, 50/50 blend of pears and apples, organically grown in our orchard. Wild yeasts, ambient temperatures, no fining, filtration or additions. Sulphite free. 

 

This blend contains 21 varieties; the pears from very old perry trees plus a showing of Conference, the apples mostly cookers. All fruit is from the first harvest of the season. As it doesn’t typically store well, it is sweated for a week before pressing. 

 

The pears are macerated for a day to soften the tannins, then blended and fermented together, until dry, which takes around seven months. 

 

Bottled just before the end of fermentation and aged in bottle for a least six months.

IVOR Late 2020

A lightly sparkling cider made in the pet nat style with apples organically grown in our orchard. Wild yeasts, ambient temperatures, no fining, filtration or additions. Sulphite free. 

 

This blend contains 23 varieties of apples, all harvested later in the season. As this fruit stores well it is sweated for a minimum of two weeks before pressing. Fermentation occurs over seven months starting in December when temperatures are typically lower enabling a slow fermentation, helping to promote better flavour and aroma.

 

It is bottled with residual sugar allowing for fermentation to finish in the bottle producing a light sparkle. This also leaves a small amount of sediment in the bottle.
